New Research Program OLIVIA: Innovation in the Table Olive Sector
We are excited to announce the inclusion of the new research program OLIVIA in the Action "Innovation Investment Plans" of the Operational Program Central Macedonia 2014-2020. The project, with a a co-financed budget of € 398.935,00 and public funding of € 297.701,25, is co-funded by the Greek State and the European Regional Development Fund (ERDF) of the European Union. The aim of the program is to develop innovative table olive products with less salt and longer shelf life, competing with the needs for products of high quality and increased nutritional value.
Innovative Technologies for Healthy Products
The OLIVIA project aims to combine the traditional taste of Greek table olives with modern innovative technologies that reduce the amount of salt without compromising product quality. In particular, the project will explore the use of alternative technologies, such as osmotic dehydration and edible coatings, to effectively reduce salt during the fermentation process. Additionally, high-value, nutritious alternatives will be used to enhance the organoleptic characteristics of the products.
Extended Shelf Life without Preservatives
To increase the shelf life of the products without the use of preservatives, the project will explore the addition of natural antioxidants and essential oils derived from Greek plant sources, further enhancing the health benefits of the final product.
Platform for Innovation Promotion
Innovation is not limited to production but also extends to the promotion platform for the new products. A modern and user-friendly digital platform will be developed to enhance the visibility and export potential of the products, encouraging modernization in the agricultural sector and promoting innovation.
Life Cycle Assessment & Sustainability
As part of the project, Life Cycle Analysis of the new products and a techno-economic analysis of the production line will be conducted to develop sustainable and eco-friendly technologies. These interventions aim to reduce the environmental footprint and enhance the economic sustainability of the company, contributing to the production of products that combine quality, environmental, and economic benefits..
Growth and Export Potential
The OLIVIA project will expand the company's product range and will contribute to the enhancement of its export potential and profitability. At the same time, the implementation of new technologies and the production of innovative products with increased nutritional value and low environmental footprint will promote sustainable development and extroversion of the company.
